Coffee has arrived for the first time in a while from "Los Santos, Santander" located in the northern part of Colombia.

This time, I prepared a dark roast, but it has a soft bitterness and moderate richness, and you can also feel the sweetness of caramel and brown sugar.

The "El Roble Farm", located at a height of 1,650m on the mountain, is a steep plateau.

The temperature difference between day and night is large, with temperatures around 30°C during the day and below 10°C at night.

In addition, a warm wind blows up from a valley at an altitude of about 400m to the south of the farm, creating thick fog in the morning.

A cold wind blows from around noon, and the temperature drops sharply by around 5:00 pm.


This difference in temperature brings a rich sweetness to the coffee beans.
